From root to flower, dandelions are a highly nutritious plants, loaded with vitamins, minerals and fibre. Dandelion greens can be eaten cooked or raw and serve as an excellent source of vitamins A, C and K. They also contain vitamin E, folate and small amounts of other B vitamins.
Please don’t pull out dandelions in your garden as they can help to save the bees. Dandelions are rich in both pollen and nectar, providing a great source of food for pollinators. Each bright yellow head contains around 100 individual flowers, meaning bees and butterflies flock to them, feasting on their goodness in the spring.
